In the Pizza Today article “Keep It Clean,” Attorney Steven Kronenberg provides advice on how to prevent pathogen outbreaks, from effective hand sanitation policies to regularly monitoring food temperature.
Kronenberg warns restaurant owners of the risks associated with pathogen outbreaks. “In addition to the human tragedy, restaurant owners may be risking their personal assets if their insurance policy limits aren’t sufficient to pay for their injured customers’ damages,” said Kronenberg.
Restaurant employees can avoid common bugs, such as norovirus, salmonella and listeria by following handwashing guidelines as well as storing food at safe temperatures. “It’s also worth reminding workers that media investigations and social media postings about restaurant food poisonings can cause customers to eat elsewhere,” added Kronenberg.
